this sounds like a variation of the spanish omelette, which normally just has potatoes and onions, I believe.

if you want to give folded omelettes a try, go to this website: http://www.pineapple-girl.com/omelet.htm. there are lots of pictures. Her omelette turns out way more browned than i usually go for, so to compensate and still avoid overly runny eggs, i usually pop a lid over the skillet at a random point to make sure the the exposed egg on top gets cooked
also, i don't like her idea of using a fork on a skillet - i go with a small, soft oxo spatula (perfect for any sort of egg you make).
anyways - i too avoided omelettes for years because i was so bad at it, but modifying the recipe from the aforementione site had me eating them so often that i started to worry about my cholestoral (21 eggs/week!) and had to lay off them for a while.
