We keep the broth separate in the fridge and cook the noodles as we need them and add the meat, jalepenos, bean sprouts, sauces, basil, lime per serving. It works out great and we usually get a few days of big meals out for it. If you have an Asian market near you you can even find the Vietnamese meatballs in the freezer. I would even recommend freezing some broth for later use.
Haa haa, I'm the same way, that's why my Boyfriend found some recipes and got cracking. I got him hooked too! I miss the city though. Pho everywhere and dirt cheap. There is nothing like an authentic bowl of Pho any day. This recipe has proved to be very satisfying though. There is only one place that serves pho about 20 miles form me (and it was nothing like what I was getting in the city) and it costs us almost $30.00 each time, we were going three sometimes 4 times a week :/
I think I would skip the mono-sodium glutamate after my mum had a very bad reaction to it after a chinese takeaway. We had to call a doctor because she could barely breathe.
Many do not agree with MSG, sadly I am pretty much hooked on it and it is a VERY big player in this recipe (I normally would not recommend adding msg to anything). I actually tried it without, the first time we made it and something major was missing, it was the MSG. So I do agree those who can go without, by all means do so.
hmmmmm.....ever heard of Nucmam....I probably spelled it wrong....but when I was over there in Nam....it was cooked by the locals all the time.....ever since, no Nucmam for me. grin.....Fish head soup. Sorry...no can do GI.....

also a funny thing concerning your avitar....when I was over in Nam....the locals used to always try and get the GI's pets when the GI's were to leave VietNam. Why do you suppose that was? See, a lot of GI's had cats as house pets and fed them very well....when it was time to leave to come home, the locals said they would take the pet cats.....and yep, you guessed it....Meow on a stick. All fatten up and ready to roast....or fry....Garfield on a fork, if you will.
