I think something like this will happen, but I don't know how to word it better than this: that Harry will die for a little while, but he'll be brought back to life, AND/or that the epilogue will mention that he dies at the age of 120. So I can't really say that Harry won't die, because I think there will be mention of him dying somehow and somewhere, but he won't die for good as a young man. There, how does that sound?
And re: Snape: Not dying is his reward, living is his punishment.I LOVE that theory, that Harry's not the only one who will have to learn about people and how to get along. Ooh. That opens up a whole new Snarry bunny farm ( ... )

I did think of something since then: If Rowling really wanted to bang us over the head with the metaphor... Ginny could transfigure Harry into a Phoenix at the last moment.
/am starting to be convinced that will happen

If Ginny transfigures Harry into a phoenix (or if someone discovers their animagus form is a phoenix anywhere except the epilogue), I will have to disown the book and write my own.
