Good lord those tacos sound delish. I never smoke brisket because of the time factor, but the way you describe it makes me want to do it. Pickled onions are a great condiment. I have some on hand that I made to serve with achiote pork barbecued in banana leaves. Yum!

Sorry about your back. The mister and I spent yesterday chopping up a felled tree for our big brush pick up, so I'm all scratched up and muscle achey and feeling stupid for waiting until it was over a hundred to start. Fortunately neither of us got heat stroke or threw anything out. Not for lack of trying. Yes, we're idiots.

Ooooh, do I love a smoked brisket. And I love pickled red onions on pork, too. I JUST LOVE TACOS.

Oh my goodness, chopping is hard enough work as it is, let alone in the heat we've been having. 109 this week! WHAT.

I clearly didn't have enough lunch, myself, because I'm ready for Round 2. (But there was no brisket left, woe!)

I have simpatico back-throwing-out! Except mine happened for absolutely no reason (an old injury, and I throw it out randomly every year or so). It freaking sucks when you feel like you'll never move or stand up all the way again, doesn't it? I hope yours is getting better quickly!
