Simple icon can't have visible textures, must be plain, not complex. Your icon is simple, because it has nice crop, and gorgeous coloring, it's not messed up with textures, blending with other pictures. Some more examples are below:

Can 'People' be interpreted as 'Person'? For example, for my claim could I use an icon of a person's hand holding a Butterfly?

Yeah, you can make an icon like this, I was meaning to have 'human' in icon with your theme :)
