I made chocolates today.

Now I don't have that nagging need to make chocolates. I couldn't find the marishino cherries, so no cherry ones this time, but I really wanted to try making orange flavored ones, anyway. Hm...orange filling can be tricky...the acids don't like to mix. Any citrus filling with have this problem. I would think if you only used just cream and the zest, it wouldn't be so much of a problem. But that is weird that it doesn't work out. And my chocolate always has a freezer look. Huh...and now I want chocolate and oranges.

You mean the citrus and dairy? I know that's why you don't put cream in citrus teas, but this ended up working. Chocolate usually siezes up with water, too, but somehow cream doesn't do that to it, so that's weird, too. Maybe it has something to do with the method. The reason it didn't work last time, though, is not really because of anything but the taste... because we put so much cornstarch in that it tasted like citrusy cornstarch. We probably should have used pectin. We wouldn't have tried this method then, anyway, though, since Kari is vegan, and the whole point was to make vegan chocolates. And the chocolates didn't look freezer-y when I used the plastic mochi packaging, so I think it's something with the rubber molds.

They're tastey, though! Kris liked them, too, since I included some (and a chocolate covered strawberry) with her gift.

Sure, interesting and nasty. Fortunately, we decided to taste that concoction before actually using it and wasting good chocolate.
