Like you I do try to eat as many veggies as possible, but with money being tight sometimes it ends up being frozen peas and dried beans for a while.
Ooh, you're right about Asian markets. There used to be a handmade tofu place about ten miles away that would sell a gallon of unsweetened soymilk for a $1, but they've been closed for years :( The other stuff that's sold in the fancy Japanese stores is still pricey -- organic for $3.50, non-organic $2.99. I guess the key is to shop around. Sometimes my mum will find Vitasoy banana-chocolate soymilk on sale at the local 99-cent store :D
