I'm partial to a lot of early church music, Russian and Western--I like Hildegard von Bingen and Anonymous 4 a lot, and there's a particular part of the Russian Easter liturgy that I just love, called "Behold, the Bridegroom Cometh". Unfortunately, the particular arrangement I favor isn't, I believe, available on the Internet anymore, and I was too bone-witted to write it down. ARGH.
