First of all, and before I forget - I'm looking for a good, vegetarian spaghetti sauce recipe. Can anyone recommend one? We've been relying on jars of pasta sauce for years, but lately I've been getting itchy to make my own. I am a lazy cook, but my vegan spaghetti sauce is:
1 T olive oil
sauteeing lots of chooped garlic (2 T or more)
Add 2-3 8 oz cans tomato sauce
1 t Italian seasoning
1 t sugar
and a bit of red pepper for kick.
Let simmer for 10 minutes, if you have time.
Those who don't want to be vegan can sprinkle parmesan cheese on top.

That sounds wonderful. Thank you! And since my husband is vegan by choice (whereas I'm pretty much vegan by necessity at the moment), this will be a great recipe to have on hand even after MrD outgrows his allergies.

That is such a huge accomplishment! It's so hard to imagine how even the simplest errands turn into expeditions with a baby in tow--good for you! Now that it's (nearly) spring I hope you get lots more of these days.

It's amazing just how much of an adventure (for better or worse!) it becomes when there's a baby in tow! It's one of those ways my whole perspective has shifted since he was born.

I always make my spaghetti sauce with some kind of caramelized component. So I'll saute up a bunch of zucchini and yellow squash, for example, and some onions, and then pour a bunch of balsamic vinegar over it. Stir very well, then add some crushed tomatoes or tomato sauce until you have the consistency you like, then add tons of crushed red pepper, oregano, basil, salt and pepper. Yum!
