3/4 C acorn meal/flour
1 C white flour
1/3 C sugar
3 tsp baking powder
1/2 tsp salt
1 C milk
1 egg, well beaten
2 Tbsp melted fat/butter/shortening
Sift together dry ingredients.
Add wet ingredients and blend well.
Spoon into 9x9 baking pan or muffin tin (makes 12).
Bake at 425 for 20 minutes. Cool.
Really brings out the "tang" in my plum jam.(
