Kirk was born in 2233, so he would have been 22 when he met Pike in 2255. I can't imagine Starfleet would take someone who didn't have a high school diploma, so I'm guessing not. Pike says he was writing his dissertation (presumably doctoral) when he was assigned to the Kelvin, so he would have been a student. I imagine he would have been commissioned already and just assigned to the ship for research purposes.
As for your last 3...there's no info about them, so dream to your heart's content!
Thanks for your thoughts. Your explanation of the dissertation makes sense and fits in with what I already had going on. And that's a really good point about how far education has advanced, and it will be useful for the scene where Jim yells at his teacher for expecting him to be exactly like his father. :)

I'm still confused about that. I thought Pike was assigned the Kelvin as the subject of his dissertation.
