I want to get a Mac laptop, but I don't really know anything about Macs. I know there are at least two Mac users on my friendslist, and several computer-savvy people, so I have some questions for you all

Download Scrivener. It is a sexy beast. I don't exactly get the point of Quicksilver but many people like that too.
I got the el cheapo small macbook in white. It worked aces. I sold it to Luny when her laptop suddenly died, and bought myself an iMac. So I can say that the base minimum Mac laptop is an awesome machine. I can only assume more = better.
I've always loved my programs (photoshoooooop) but the Mac is the first machine I've ever hugged.
Been using a 15" machine since before I got to college. It's just fine most of the time. Sometimes I wish I had a 10" machine with some of the crappy college desks, but this has served me well. More stuff fits on the screen.
Spec wise, MacBook Pro is going to be the better performing. Go to a store and play with them so you can get the feel of them. Pick which you like the feel of better.
There's a new upgrade to the OS coming out "soon" called Snow Leopard. It's going to be primarily minor changes to the current platform, but there are going to be a couple new features. Not sure what they all are, though.
Thing I like most about my laptop? It runs Mac OS X, Windows, and Linux. Couple this with VMWare, and it runs *anything*
Mine is one of the original 15-inch MacBook Pros; I've found it's very portable so long as you've got a table to put it on; the thing gets pretty hot, especially in the summer, though I'd imagine the newer ones might not be as bad. I don't know much about the MacBooks, except that they'd be more geared toward portability, what with being smaller and lighter and all; so if that's your biggest concern, I'd go with it. (Plus they're cheaper.) I think Apple's updated its laptop line fairly recently, so I wouldn't expect new models until at least next year, though I don't follow this stuff that closely.
15" MacBooks are pretty portable--MacBooks, in general, are pretty portable. I was borrowing an older laptop before I bought Miyuki (who is only a 13" Macbook, a normal one, mind you), but the weight difference and general lack of clunkiness is astounding

My limited experience with Macs has taught me that all of the laptops are good and portable no matter which one you get. However, the smaller ones tend to run a little hot, so don't plan on having them spend a lot of time in your lap while they're plugged into AC power. Also, Macs are horrendously difficult to put back together once you've opened them up. They are by and large held together by plastic snaps and...tape. Yes. Adhesive. So don't go breaking it, or it will look broken forever.
