Mm! Enchiladas!

It's not particularly Texan, but the Amy's Frozen Dinner people make this Sante Fe black-bean enchilada dish that really makes my toes curl. I was struck by an all-consuming craving for it on Tuesday, and I thought, "I can fake this ( Read more... )

I hated beans for years, myself. Then I discovered that what I'd been taught to think of as "beans" were better called "bland, undercooked beans." Mealy and tasteless at the same time; true Southern Cuisine. Once I started eating beans that were properly cooked, I fell in love.

Substitute "greens" for "beans," "over" for "under," "slimy" for "mealy," and "bitter" for "tasteless" in the above, and you have another example of how the south initially ruined a great food for me.

I just gotta chime in here. Not only were the enchiladas fantastic fresh from the oven; they were amazing for lunch the following day, too!

Sherbie-cooked meals rock my world.

Mmmmmmmm! Dang, these sound gooood! So gooood my finger gets stuck on the 'o' and 'm' keys while trying to express myself!
