I hated beans for years, myself. Then I discovered that what I'd been taught to think of as "beans" were better called "bland, undercooked beans." Mealy and tasteless at the same time; true Southern Cuisine. Once I started eating beans that were properly cooked, I fell in love.
Substitute "greens" for "beans," "over" for "under," "slimy" for "mealy," and "bitter" for "tasteless" in the above, and you have another example of how the south initially ruined a great food for me.
