palak = spinach.

For example, "palak paneer" is spinach with "paneer", which is home made cheese.

That would have been my guess, but I've seen cheese and spinach listed as "saag paneer," so I thought saag was spinach. Do both words apply to spinach, and they mean different things about how the spinach is prepared?

I'm close to making my own paneer. It's definitely been on my mind. Among other advantages, it's simpler than mozzarella, because the required temperatures are closer to room temperature. Some day I'm gonna make mozzarella, though, you see if I don't.

I'm just trying to guess how many steps away you are from becoming like Bill Buford in his book Heat. You'll stop short of slaughtering your own pork or quitting your job to work as a line cook in a busy restaurant, right? ;)
