Hoo boy, cream of carrot soup is sure, um. Carrotty. But, I have now officially christened the Crock Pot! Stewy goodness shall ensue.

What flavor do I need to add to carrot soup to make it, y'know, yummy?

To add to The Mc's "other end of the spectrum:" allspice with that cumin; or caraway seed.

Oddly enough, I think I had carrot soup-made-yummy with nutmeg... If that sounds disgusting, then maybe I didn't and I just like to make stuff up!

Actually, I love carrot soup! They used to serve it at the falafel restaurant where I ate when I was going to school in Vancouver. I'm afraid I can't provide any useful insights for preparing it, though. My Mom has tried it a couple of times, but can never seem to quite get the carrots ground up finely enough, so there are still tiny slivers of carrot in the broth instead of a uniform cream. (I'm not dissing my Mom's cooking; she's excellent. She's just never had much luck with carrot soup.)

The tip your mom needs is, don't try to mush the carrots before cooking. Instead, chop up the carrots into, y'know, chunks, cook the whole soup, then puree it in batches in a blender. (Don't fill the blender too full, to avoid sloshing hot soup onto yourself; or wait for it to cool.) Stir in the cream as the last step, after the blending.

I've made butternut squash soup, which is similar --and, oh yeah, I did make pumpkin soup! Yes, the fall harvest has me totally excited. I've been jonesing for some squashy lovin'. Pies, muffins, soups, stuffed... *glee*
