I like the idea of water spirits (and not just because wet boyz are awesome)
Tricksters, all the various flavors of, would be interesting. (Gabriel is a great character, but as a Trickster MOTW it's nearly as bad as "Sam Hain the demon"- ok, not really, but only because Sam Hain was really really bad!) I'd love to see Coyote, or Badger/Tanuki (wouldn't Dean just love Tanuki?;)
Truly, one of the most interesting things about the whole urban legend folklore aspect of Show is exploring regional differences and all the different legends various cultures have thrown into the melting pot. Native American has barely been touched, and there are still lots of Asian, East European, Celtic, etc. monstery things- even home-grown critters!

Oh, yes, I love Coyote and Raven - around Central New York the Onondaga's trickster is Chipmunk (maybe this is where Disney found Chip n'Dale, lol).
