I don't have anything for you for A Walk to Remember, but a few Dean/Cas fics with music that stuck in my mind are
The Violin House by teh_helenables
and
rainylemons's much-recced The Way Back (well-known as the Castiel-Taco Bell story) - the music part in this is more towards the end.
