The Broken Toys 'verse by Morgan fits your request pretty well. Starts out with Sam breaking Dean down but then he "rebuilds" him how he wants him, which is pretty scary for the demons surrounding them. Fic is explicit but only bottom!Dean.

The incestuous courtship of the antichrist's bride by fleshflutter is a hilarious and completely opposite take on the consort deal. Sam's not evil but he is the antichrist and he mistakenly names Dean as his consort, which requires first time sex and is completely supported by both angels and demons.

The Light of Munin by leonidaslion is kind of involuntary consort-ship in that it's a demonic future where everyone but Dean is a demon but Dean and demon!Sam don't remember each other, yet still have a connection. Very explicit and bottom!Dean.

And of course there's the Suite!verse also by leonidaslion where Sam basically takes up the boyking mantle in order to keep Dean forever. Very explicit and a definite classic in the fandom, imo.

I don't know if you have read this one, Dean isn't exactly a consort, but it fits most of the rest of what you are asking for and is a really good read.

Summary to Now: The Big Secret was that Sam was part-demon, conceived during a possession. When Dean told Sam the secret, Sam freaked out and ran off, both so he could find answers that Dean didn't want to look for and so that he wouldn't endanger Dean if he went rogue. While they were separated, Sam got kidnapped, brutalized, trained, and reprogrammed over the course of 8+ months by the demon's people in preparation for the war. Then Sam was returned to Dean, who was unaware of the kidnapping and reprogramming, with a reasonable cover story, and they hunted together again for almost a year while the demonic war machine was revving up. Humanity basically lost on the first day of the war and Sam, rather than kill Dean, took him as his slave. Dean is, of course, having a rough time conforming, but harsh discipline ( ... )
