For Cas, that scene in S4, Lucifer Rising when he cuts his own arm with a knife to draw the Enochian sigil in the Green Room. There's also blood dripping.

There's a very brief shot of Cas holding a knife at the beginning of S5, The Song Remains the Same after he calls Anna out on hiding a knife behind her back.

In S5 Two Minutes to Midnight, Cas cuts off Pestilence's finger with a knife.

I can't recall the exact episode, but it's the long fight scene where Cas tangles with a couple of angels in the forest. There's plenty of knife use in that scene.
