I don't think "allowing for the possibility of two highly spiritual people - one of whom was, functionally, seriously brain-damaged - deciding to get a religious blessing on a non-sexual partnership" is necessarily the entire writers' room and also Collins himself "forgetting" canon. I mean, I get that not everyone shared my/their interpretation of S7 and that's fine, but it's a perfectly plausible scenario.
I think that's certainly plausible. I do think, however, that both the writers and Misha do their best to write off a lot of things that happened with Castiel in season 6/7. I also think the fans often give the writers too much credit in terms of thoughtfulness and creativity. There are plenty of pieces of canon they ignore for the sake of a story they want to explore, and the fans almost always have cooler, more elaborate ideas than the storyline the writers churn out.
