I sit hear munching on the last few bits of a turkey sandwich I made. It consisted of smoked turkey, cheddar cheese, a couple pickle slices, chili mayonnaise, and spicy brown beer-thyme mustard on half-wheat bread (half whole wheat flour, half bread flour). How do you go about it? I'm familiar with the process in general, but not how to do it in the kitchen. Where does one find rennet?

On a related note, I have made yogurt "cheese" before by straining it, resulting in a tangy low fat cream-cheese spread/dip thing. It's good stuff.

I bought a cheese making kit...basically contains rennet, salt, thermometer, and culture.

All in all it cost around $25(for the kit, not including milk), but it makes around 60 pounds of cheese.
