Actually, yes that does make sense and it's not just you. That's why gum didn't help me, because it wasn't about my mouth, it was about my hands. I didn't realize how much I'd used a cigarette as a speaking prop until I didn't have it.
As for what to do, pacing works. Book works. That's about the time that I got into the habit of carrying handwork with me, little projects that fit into my messenger bag, just to keep from sitting on a bench and drumming other people into homocide.

I usually have a book for filling in time, or I think about stuff. (Often fandom stuff, because I am a big geek.) I tend to end up making lists in the downtime. I usually have music on as well. I don't really know. I've only ever been a social smoker, so I tend not to feel the lack.
Twitter can do anything, apparently. Host a revolution, help you quit smoking...
Roast-garlic-and-onion bread sounds delish. I had a potato and rosemary bread from the farmer's market the other week that was amazing. I don't really bake myself - I even managed to fuck up the no-knead bread, which I gather takes talent. :oD
I'm thinking, what do other people do while waiting a few minutes? I've never smoked, so I'm thinking what I do. The iPod is good, and I'm ALWAYS reading SOMETHING. Hell, standing around having sexual fantasies ideas for fic couldn't hurt. Other people have GOT to have better ideas than that!
Ugh, I'm in the same job-seeking process, I've had ONE interview since my last contract ended. I HATE JOB HUNTING. I'm seriously considering getting out of tech writing and into - what? Not a clue.
Not being in your boat I'm not sure this helps, but I love my mp3 player and my notebook. Both are filled with random nonsense which helps pass the time. And can I say one more time: WAY TO GO!!! YOU CAN DO THIS!
