Looks great Kev! I have a hard time thinking about how to cook eggplant that's not eggplant parmesan or just grilling it. What you did with it looks really yummy! You're doing an awesome job, keep it up!

I was most happy with the eggplant and we cleaned the plate. Are you cooking with asian eggplants or the big fat ones? I'm going to attempt to bread and pan fry the leftover Asian eggplants that I have but I suspect it's not going to be that great.

I didn't know there was such a thing as Asian eggplants. So they're smaller and thinner? I decided not to pan fry mine and I baked them instead, but they probably would've turned out better if I had fried them. I didn't have breadcrumbs at the time (and no food processor) so I just used panko LOL. It turned out alright so whatever XD

Yeah they're not as fat, they are long and slender. Google search for images of Chinese Eggplant or Japanese eggplant and you'll see. Usually a nice purple and much less seeds inside since its so skinny.
