Sparky is a reasonable cook

I am fairly used to dinner guests. Partly this is due to Beloved’s constant inviting of people (which he SOMETIMES deigns to tell me about in advance) and partly due to several friends who are now accustomed to filling their bellies at my table (especially F. who brings doggy bags and will send her menu order in advance) and, of course, my ( Read more... )

pity you live on the opposite side of the pond, I'd so invite myself to dinner at your place in a heartbeat. My dad was like that - we fired him as the griller because he made *everything* shoe leather *shudders*

Thank you, I try. Ketchup is wrong - it's a useful ingredient at times (but sooo sweet) but not a condiment. Well done steaks are an abomination - there's no point having decent steaks if you're going to do that to them

Unfortunately, my body does not like any beef that is cooked less than medium well; it just does not digest it well. That being said, I do NOT like charcoal hockey pucks for my steak. However, *properly made* medium well is still very juicy and yummy. I think I've gotten lucky at a couple of restaurants, and occasionally my husband will manage it (he's getting better). For a guaranteed yummy, juicy, medium well steak, I usually have to pay a bunch of money at a really high end steakhouse.

charcoal is eeeeeeeeeeeeeeeeeeeeevil.

I think you'd probably have to have a hot pan to seal it and then use a gentle heat and, by all that is holy, let it rest.
