My mom started eating it a while back on a health kick and it honestly creeped me out. It looks all alieny to me. But it actually tastes rather good once you get over the weirdness (though that might have just been me). It's really simple to make as well. This was just 1 cup quinoa and 2 cups stock. Bring to boil then lower to simmer for like 15 minutes. After it absorbed all the liquid I added lime juice and zest, cilantro, and just a bit of salt and pepper. So good! It's also great cold with salads.

I promise though, it's really quite easy! And you can make it in less than 30 minutes. Mostly, I'm just trying to eat less junk food.
