The secret is all in the milk foam: it must neither be too dense, nor too watery. It's the perfect balance that makes it possible to 'draw' on the milk surface. Lovely!

A good friend of mine has just finished a barrista course in Italy for two weeks, and was busy showing us how he could draw rosettes on his cappuccinos...
Is it really as easy as it seems? And if so, why does hardly any barista do it on a daily basis? I'm sure something like that would make customers come back to that cafeteria over and over again (provided the coffee is also good, of course). ;)
No, he says it's really difficult. It took him several attempts to get back into it when he got back home. All the rest was fine, it was the one thing he struggled with.
