Kleftiko?

One of the best cooks on the Bujold list just mentioned "a long, slow Greek Kleftiko (Thieves stew) where the meat is packed with its vegetables in a sealed container with little (but enough) water or wine and cooked VERY slowly for eight to ten hours.
