Well I really don't have anything that pressing to say! I guess I'll update on the vegetarian kick Iajia is going on. At first, it was hard to figure out what I would cook... because I wanted it to be Mexican food... and that left me at a loss. We'll still need to find a bookstore to buy a Vegetarian Mexican recipe book. I am sure one here in ( Read more... )

Most of the "Mexican" food in the US is definitely more along the lines of Tex-Mex. I have had some authentic Mexican food here when there have been families that have made it and offered some to me, and it's quite good I think. I hope you can find a cookbook!

Hello. I stumbled upon your LJ while looking for other school guidance counselors. I've decided to put all my counseling lesson plans online this next year and wanted to invite you to check them out once they are up.

We appear to be pretty opposite in many of our beliefs/worldviews but simmilar in many others. You may find some of the things I put up useful.. if not NVM. :)

Mexico is a big country. There are tons of different regional foods. It's not all like Mexico City or all like border food. Kind of the same way the US has regional attitudes toward food. That said, I can totally see where you'd have to look hard to find a cookbook that resembles food of that region without any meat. you might want to try one of these places and try to mimic their recipes. Sounds like you guys are doing alright though. When is Nuri supposed to be born?
