Because, um. You know. After the Roadhouse burned down, Jo couldn't even pretend like she had a home anymore, couldn't pretend like hunting wasn't what she had to do, so she loaded up her car and started driving.
Eventually, she found herself in California, where there was... a haunting, or whatever, at this university. In the math department. And, uh. She got the ghost, or the creature, or whatever, but... There was this woman there, when it happened. And Jo got hurt, getting thrown around like she did, before she killed it, and so, ah, the girl--woman, takes her to her apartment. Makes her tea. Gives her a shower and some clean clothes, bloodstain-free.
And they talk, and Amita's trying to understand, figure out what even happened, and Jo's tired of the bullshit, knows she can't lie her way out of this one anyway, so she tells her the truth. And then, um, she stays with Amita while she recovers. And then they go to the beach. And make out. \o

It's totally on my list, OMG. Haha, I kind of love this idea.
Amita is all nervous because Jo won't go to the hospital and she watches Jo stitch herself up like a pro and thinks 'Who the hell is this girl?' but somehow she knows she can trust her and when Jo explains it all she surprises herself because she really believes her, she doesn't doubt for a second that Jo's telling the truth.
She keeps saying, "That... that cut is really deep. Don't you... think you should get that looked at? I could drive you to the hospital. If you want." because she knows if it were her, she'd be crying right now. But Jo waves it off, "I got it, thanks," and takes the aspirin Amita offers.
Amita doesn't want to believe her, because. Well. She's a mathematician, for Christ's sake. She lives for logic. She always... always looks for an explanation to these things, but. She was THERE. And she saw this thing, and she saw it throw Jo across the room, and shit, there's just. There's nothing that can DO that. She

Haha, I came back to this post to edit it and remembered I never responded to this comment. I wanted to tell you that before you posted this I'd had it in my head that Jo would leave, and then you wrote that and I thought, AH! Leda has exactly the same mindset on this... :-)
