Lucky him. And you. You're spoiling the man, but then I know you like to :-)

I do, indeed! :-D

-Mind you, last time he came over for dinner (Tuesday evening) he brought a bottle of Champagne, so I'm not the only one doing the spoiling. Oh, and he's just bought tickets for us to go and see Don Juan at the Royal Theatre at Christmas!

Dead simple. SERIOUSLY! Yes, it involves a fair amount of faffery, but most of it can be done days in advance, allowing you to be completely relaxed by the time you actually have people over. I hate dishes that require you to make everything last-minute, stressing away while you snap at your guests and generally give everybody a miserable time! ;-)

Does it have to be goats cheese?

Of course it doesn't!

Goat's cheese or something similarly tangy is nice with the sweetness of the onion marmalade, but I reckon it wouldn't be bad with a more subtle cheese, either.

However, if you're not keen on the goats cheese I'd recommend putting on a very small bit of goats cheese, rather than substituting it with something else. If you crumble a tiny bit of goats cheese and sprinkle it on the tarts, this should give the nice contrast while making it easier on palates less keen on the goaty pleasures. Key rule is, though: Do what you think might work for you!

Cool. I'm allergic to goats cheese (as well as really not liking it) but i liked the look of this recipe.

Cheers.
