1 cup flour 1/2 cup quick oats (not rolled - quick) 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 1/4 teaspoon salt 1/2 cup soft butter 1/2 cup brown sugar 1/2 cup white sugar 1 egg 1/2 teaspoon vanilla 1/2 cup pumpkin puree (the actual pumpkin, not the pie filling) 1 cup raisins (optionaly but really recommended)
Oven to 350F.
Mix flour, oats, baking soda, cinnamon, salt. Set aside.
Cream butter and both sugars. Add egg and vanilla, then pumpkin. Stir in the dry mix. Add raisins.
Bake by teaspoonfuls 8-10 minutes. Let them cool on the cookie sheet for two minutes before transferring to a wire rack.
No, seriously, let them cool. They will fall the hell apart if you try to take them off the sheet without cooling them. Trust me.
