Mac 'n' Cheese with Leeks and Peas

I am eating leftovers for lunch, and they are delicious. In this time of frozen slush, I thought you all should know how to make yourselves something warm and delicious, too. So, a recipe (no amounts listed because I am a firm believer in intuitive amounts--sorry):

Well, you don't have to use peas if you don't wanna. I think they're yummy, though. *g*

Peas are one of those foods I just don't like but will eat if I have to, like if they're in my veggie fried rice. Ben doesn't like them either, so I don't generally cook with them. (I wish he liked spinach, though...)

I made pasta carbonara out of leftovers (which is very close to what you made only with bacon [in this case, cubed up porkchop) and not baked).

Ah yes, Carbonara was very popular in France. They made it with lardons, which are little bits of fatty pork. I am not a big fan because I like my fatty meat super crispy and melty like crisp crisp bacon. Cubed up porkchop might be okay, though.

They are delicious together! And don't listen to all the weirdies who claim you should only use the pale parts. The green parts have more leeky flavor and mix in beautifully.
