Archaeology may sound exciting (and look exciting when done by the likes of Harrison Ford and Brendan Fraser), but for the most part, a job is just a job. There's the usual collection of inconveniences and discomforts, and hopefully a decent paycheck at the end of it. Thanks. Those letters always sound so fake, and I think it's so crucial to sound genuine if you really want the job. It's frustrating.

You're too modest ;)
What you're saying is not fake, it's a half truth and maybe a touch of indulgence here or there. It just feels wrong and immodest to leave out the negative bits.
On top of that, word will probably have got around about just how tough the conditions were at Goodwin, whar with Archaeology being an even smaller world than Lampeter, they'll know already that you're able to slog your guts out if it's required, even if not willing :)

The letter sounded really good, very professional. One thing that I have heard from a lot of employers/grad schools though is that they want the email address to be something professional/unimaginative such as your name @ whatever . com.

Possibly true, but I think less necessary in archaeology than in most fields. Archaeologists are a fairly informal bunch. The usual expectation from employers is that we show up on time, decently covered and relatively sober. I'm not going to sweat about it.
