I just want to announce that I am going "friends only" with all my posts. This is not in response to anything. I just feel kinda vulnerable putting my family's life out there for anyone to read.

Hi, your husband directed me here - he was raving about how good your vegan crockpot meals are. :) I was wondering, since I am not so very good with the crockpot, if you could give me some ideas or recipes to use. I have a 6 qt. slowcooker, but everything I've tried in it so far has come out...well, not too inspiring. I have a dozen chili recipes, but if you have anything that is as simple as a bean and rice dish, I'd be eternally grateful. I have three young picky boys (ages 6, 3, and 18 months), who I'm trying to convince to eat vegan at home, and so far, they don't like my experiments. :)

Thank you for any help you can give. And please don't feel rushed to do this - I'm sure it's weird to have strange folks come to your journal demanding recipes.

Im happy to help! What I do is at the supermarket they sell flavor packets that are meant for meat. They are basically powdered marinades. McCormick makes most of them. There are lots of vegan ones. So anyways, in the morning when I get up I put a flavor packet, a cup of dry beans (whatever you like) a cup of rice/pasta/barley,etc sometimes I throw in fresh or frozen veggies and fill it up with one cup of vegetable broth and water and 1 tsp salt. By the time my husband gets home from work its all cooked. And its a huge meal. It probably costs me less than $25 to make a week's worth of these. Whats good about the flavor packets is they have a big variety so one night you can make italian, one night mexican, etc. And if it doesnt have enough flavor you can always add salt and pepper at the dinner table.
