I could be wrong, but I believe everything is determined at birth, save for the number of children to be born. Just to be safe, I would make a save file before conception in addition to a save file right before labor.

As far as I know, hair color isn't genetic, so feel free to simply change it to the appropriate color when the baby ages to toddler. Save/Reload is a waste of time.

Pretty sure hair and eyes are genetic. I'm only on Gen 2 but mother was CAS and father had no family tree and every single kid (of 6) got mom or dads hair & eyes.
