CORN SALAD. DELICIOUS.

i don't think i would like it with bacon because the salt factor would overwhelm the sweet corn factor. but seriously, this was so freaking delicious. AND. i think i have all those ingredients at home already. BONUS!!!!!!!

that made a huge bowl of pasta salad!! i can't imagine how much there would have been had you used the whole thing. are you sure you didn't double it by mistake? that looked like way more than 16 oz.

but then again, a little goes a long way 'or zo' they tell me. YUK YUK YUK.

No, I didn't double it by mistake. It really does cook up like that. I was worried about it, but decided to follow directions like it said the first time. Now I know that I don't need all of it, so noted for next time.

IN OTHER NEWS, i maded the corm salad today. i made a half batch which is still plenty--if we go to a party tonight i'll bring it to add to the pot luck. if we don't go (i gave blood today so it'll depend how i feel) it's not a huge amount and i'll be eating it myself. it's ... SO ... delicious.

the nice part is it's also hard to screw up. i halved it in my mind while composing the salad instead of writing it out first. (yeah, i know.) so i accidentally used all the oregano and garlic for the FULL batch, but it doesn't seem to have 'hurt' the flavor balance too much. ;)
