2. I *love* cooking fish en papillote! And I prefer snapper to mullet. My only drawback is that I just plain can't get good fish around here. I'm completely spoiled by having lived near the ocean before, ALWAYS having insanely fresh fish available, and half the time having caught it myself!
That dessert looks FAB. I'd have to cut it down a bit to fit in the diabetes restrictions - maybe half a peach & 1 tbsp of honey. But the rest? yay!
I think it helps a lot to have fresh fish. They didn't sell mullet here. Or maybe I didn't know where to get fish like that. Chinese people prefer their fish literally still swimming. So, the only place to get non-swimming fish was from the groceries stores that cater to ex-pats.
The dessert was great. I love fruit based desserts. And simple. I just popped it in the oven while eating the main.
