You could, but first I'd have to want to. *salivates at the thought of pecan-encrusted fried turkey*

Otoh, I recently made the pumpkin bread again, because it was that good. (and less of a pain with a little practice)

Finally tried this--was delish. Just out of curiosity I googled vegan pumpkin pies. Most seem to substitute silken tofu for the eggs as well as the condensed milk. But I found a couple that used a cup to a cup and a half of a "rich soy milk" or "vanilla soy milk" for the condensed milk, then used cornstarch or arrowroot as the thickener substitute for the eggs--so you might want to try soy milk:
