I do care about my health. Therefore I eat meat. If I don't get a certain amount of meat protein, my blood sugar plummets because of my hypoglycemia. That being said, I do try to get sustainably raised meat when I can afford it. If I could go veg, I'd consider it, but my body chemistry simply can't handle it.

You do not need meat to get protein; that is a myth. I'm not a vegetarian, but I am considering it now. I'm not a doctor either, so let me ask you a question: what causes your hypoglycemia? Could it be your diet?

I know this from experimenting with my own diet, and from my experiences managing my hypoglycemia. My body chemistry is as such that when my blood sugar crashes hard, vegetable-based proteins don't help (I've tried); only meat-based protein helps me get back on track. I've tried being vegetarian, and even with the recommended balances of veg-based and non-meat (cheese, eggs) proteins, my health goes downhill. It's something peculiar to my body. This is something I've concluded over years of living in and managing this body.

As to what causes my hypoglycemia? Most likely my insanely high metabolism, and I burn sugars off like nobody's business. I've got a routine appointment with my doctor this coming Monday to figure out a reasonable diet low in processed sugars, and to make sure there's nothing else to be concerned about, so I suppose anything else should come up with that.

I'm a vegetarian already, and have reduced my consumption enough over the past 11.5 months to equal a weight loss of roughly 60 pounds ( ... )

Agreed. As I slowly switch over too more cooked dried beans (Indian style food) which I can buy in medium sized bags (or large bags if I had a family to feed) I am reducing my food bill AND having more interesting and delicious meals. Of course my favorite food is still Thai, but the more I find out about Indian spices and variety of dishes the more I like it!
