[gastronomy, recipe] Peppery Chicken Pear Stew (Slow Cooker)

Dec 07, 2015 01:58

I'm adapting this for my crock pot.

It came out okay, but still not peppery/gingery enough.

~6lbs boneless skinless chicken breasts
5 bosc pears, skinned, cored, chopped into large pieces
1.5 c bread crumbs (I used the cheap commercial kind, unseasoned)
1/2 tsp powdered ginger
1 tsp ground pepper
1/2 tsp anise
2/3 cup red wine vinegar
2 cups water

0) Put chicken and pears into lined slow cooker (I did two layers of each with chicken on the bottom.) Cook on high for about 5 hrs (chicken should be cooked through).

Meanwhile,

1) Mix spices in the vinegar and let set a bit to pull the flavors. Then mix into the bread crumbs with the water.

2) Remove chicken from slow cooker, hack/shred into gobbets, and return to slow cooker. Mix in spice-breadcrumb-vinegar mixture. Cook for another hour.
