I just made something not unlike palak daal. Last night, I made palak paneer, one of my favourite Indian dishes, for the first time.

The daal was near-entirely improvised, and absolutely delicious, except for burning the spices a little (note to self: lower heat!)

Nonononono! No, kittens, thankyouverymuch. Although that's a complete and utter tangent...

Which latin bit? The title part is something along the lines of "Those who travel across the sea change their perspective, but not their state of mind." Seemed very appropriate when I happened across it.

The subtitle bit (loosely?) translates to: "Beware running out of wine" :D

Vegetable Korma!

The only hard part is not curdling it. If you use tofutti "sour cream" you cannot possibly curdle it AND you can microwave the leftovers without it getting gross. WIN!

I remember at least one of the tofutti fake-dairy products having objectionable ingredients (I want to say hydrogenated oils? but I'm not sure) Will have to check on that.

But yes, must try! After a brief google search, I've found that I now have a name to the dish that we had so frequently while I was in Kerala. And OMG delicious!

The sour cream may well have some slightly scary crap in it. I do remember reading the label and considering it, if not "real food", significantly less scary than what the real thing would do to my body at this point, so it's a trade-off :)

I guess that's fair. Luckily (I guess?) I can still process dairy. Just not too much of it, and preferably organic. And I can't drink milk.

I'm lazy. The grocery stores around here sell pre-mixed simmer sauces for korma, tikka masala, makhani, vindaloo, and a bunch of other stuff, so I toss that with coconut milk and some diced up meat and veggies in the crockpot *grin*

Oh, but what's the fun in that when you can mix the spices yourself, and tune a wealth of ingredients into a symphony of deliciousness?

I'm lazy, too. It's just that cooking is my one big creative outlet... and the only one I ever really think I'm any good at.
