Not to be outdone, I expanded on your balsamic mushrooms today by putting two turkey thighs and a cup of chicken stock in my crock pot with a bunch of mushrooms and about 2/3 bottle of newman's own balsamic. And it turned out lovely!
That sounds yummy! I have a personal preference for starting out any soup by sauteing onion (and celery, red pepper flakes, and ground black pepper if present) - it really adds to the flavour (and adds fat, which I seem to have trouble getting enough of unless I constantly stock ice cream and avocados). I used to just throw stuff in a pot until it was all cooked, but once I tried frying the onion first, I never went back.
Suggestion - add some beans, to complete the protein in the rice?
I wanted to add beans....thought I had a can, but didn't. It wasn't a planned recipe, just a throw-whatever-ya-got-in-the-pot. But, next time I will try to have some beans on hand :)
And I am definately going to try your suggestion for sauteing! Not that I need the extra fat, but it sounds yummy!
