Well, I cut up two cloves of garlic and half an onion. Added that to a warm pan with a little bit of olive oil, and some spices (coriander, chili powder, red pepper, "poultry" seasoning, and... something else I couldn't remember. Meanwhile I got a pot of water boiling.
Chopped up a carrot, a zucchini and a yellow squash and put it in the pan with the onion/garlic. Turned up the heat until they were just starting to soften. Added a can of black beans (washed), some textured vegetable protein, and a container of vegetable broth from the cupboard. Stirred.
Cooked the pasta and rinsed it with cold water while the rest of the soup heated.
Added the diced tomatoes, and the pasta together. Let it warm through. Then I toasted some bread, added it to the bottom of a bowl. Ladeled the soup over it. Topped with a cherry tomato, some cheddar cheese sticks, and sprinkled with romano and parmesan cheese.
