Thai Coconut Soup

My sister brought this soup to M's baptism.  It was so good, I have been craving it so I made it Saturday.  aloha_sushi 's was better, but it was still delicious.  Try it, you'll love it!

Thai Coconut Soup (Tom Kha Gai)

1 tablespoon olive oil
2 tablespoons grated ginger
4 to 6 teaspoons Thai red curry paste
6 cups low sodium chicken broth

Hmmm... sounds divine. I wonder, could you substitute green curry paste for the red? I don't know the difference, except for the color. I have a jar of green and actually have all the rest of the ingredients (except for the mushrooms, which are of the devil.)

You are asking the wrong person... Ask Carol. She's more versed in those sort of ingredients than I am. According to the internet, the difference is the type of chili used in the paste and green is hotter than red so use it sparingly and taste it if you're going to give it a try. I would try it with the green and see if it is good before I went out and bought more curry paste. But that's just me.

This sounds so terribly awesome--and I know I could never find the right ingredients here! Please save the recipe for me--or better, have a bowl ready when I get home!!
