i buy a lot of frozen veggies. they hold the nutrients and wait until you're ready to use them! Then all you've got to do is heat some up, pour over cous cous or quinoa, and you've got a healthful meal with lots of vitamins, complete proteins, and it'll satisfy you when you're hungry like the wolf.
