It's funny- I haven't read too much Trek fanfic in recent years - most of the stuff I read was when people were still publishing paper fanzines (pre-internet). I should go find some.
I'm with you on identifying with Chapel. Although, I have to say it annoys me that so many people see her as a weak, simpering, Spock-chasing character based solely on that one scene where she goes all gooey over Spock because of that virus. She was stronger than a lot of people gave her credit for. I wish the writers had fleshed her character out more.
But then, I'm so glad she got to play Lwaxana. There's a cool story I heard about her getting the part: apparently, Gene came home one day and told her that he had a new part for her - and the best part was that she wouldn't even need to act... LOL. It gives great insight into what she was like as a person.
And that list... George Takei's closet and Shatner's hair. Hah.
Weak and simpering? Never. Nursing is a tough profession, and you don't go into it without a strong stomach and a tougher mind. In my mind, Chapel was a professional and did her best not to let however she felt get in the way of her job.
Re: the list - my buddy Mike has the greatest cynical sense of humor (and his way of coping, I suppose). I feel a trifle guilty getting a chuckle out of someone's death, but I hope people find a reason for one at my funeral, too.

I only got into the fanfic for them in the last few years though, and mostly read one author. But I'm glad the fic is out there.
And she will be missed.
