Those quesadillas don't sound inauthentic! A quesadilla is basically just cheese melted between pan grilled tortillas -- like a grilled cheese. I mean, at serious Tex-Mex places here, you can actually get ones that are no more than that, or cheese and salsa, or cheese and some fajita meat. Yrs sound super yummy! I've done a few African recipes lately that really have me loving cinnamon in savory recipes. But I haven't ever tried cocoa powder.

I think the cut of meat I use, the way I cook it, and the folding of the tortilla are a departure from how it's normally done. But it seems to still qualify as a quesadilla. Mmmm. I sorta want one now. But tonights menu involves chicken in an almond coconut sauce that's already marinating, and probably Lebanese style collard greens. Maybe later in the week next week...

There's a little hole-in-the-wall place here that folds them like that and calls them quesadilla tacos. They are melty and delicious!

Almond coconut sauce sounds goooooooood. Right now I am really craving chicken salad, but yesterday I finished off all that I'd made. :(

I fold em cos it makes it less likely that the filling will drip out the sides, and because one folded one or one half of a two tortilla one usually fills me.

If it comes out well, I'll post the recipe for the coco almond chicken. Its out of 1000 Indian Recipes.
