So the thing about the gluten-free diet is that there are a lot of GF flours out there (granted, they're much pricier than wheat flour, so be prepared), and a lot of great recipes for various pastries and breads. GF goods also tend to be moister than glutened goods, which makes for awesome texture in things like cakes, cupcakes, and quick breads
