After three years of trial and error (don't ask!), my first self-made Kimchi which didn't explode!! It's yummy and just perfect. It was a good decision to use real gochujang for it instead of just vinegar and sambal olek.

looks oishi ...not fans of kimchi but i love korean food n kimchi fried rice is yummy ,u even made it by own self *waa

Yep here in Germany ppl use Sambal Olek more than Tabasco.

Oh with me it is also hit and miss .. the last couple of tries it fermented so much the stuff exploded when I opened the bag where it was stored :s
But this time I used a plastic container and the last two days were really cold so it turned out just right.

you'll have to give me your recipe, if you don't mind! I've never had it explode (though I do normally put it in a glass bottle), it's just been really bland.

I made it according to this one though I replaced the red pepper flakes with gochujang and ignored the fish sauce.

Exploding kimchi? Wow. I've actually not gotten up the nerve to try kimchi yet but we have no restaurants here & I've heard bad things about the stuff in the grocery stores. But it looks so good in the dramas!

Usually I buy self-made kimchi by the store owners in my Korean supermarket back in my hometown .. this one is sooo good :) They also make radish kimchi, pickled spinach and Higashi goma wakame (seaweed salad) and it is all yummy .. this is the first time my kimchi tastes anything like the one I buy from them :)
Industrially produced kimchi doesn't taste anywhere as good as this one.

Next time we go to the big city & hit their Korean supermarket, I'll have to find their freshmade kimchi and get my nerve up to try it.
