Low-cal blueberry muffins

Preheat oven to 190˚C.

Combine: 
¾ cup all-purpose flour (341)


¾ cup whole-wheat flour (305)


1 tbsp splenda sweetener (6)


3 tbsp splenda brown sugar blend(90)


2 tsp baking powder (4)


¼ tsp salt

and mix thoroughly in a large bowl.

WHISK 1 large egg (88)
in a small bowl.

ADD ½ cup skim milk(45)
ADD 2 tbsp ICBINB Light (100)
ADD 2 tsp vanilla essence (24)
ADD 1 dsp fat-free yogurt (20)
and then pour over dry ingredients.

Mix in 1 cup blueberries (83) and fold with a spatula until dry ingredients are moistened. Scoop batter into muffin cups and bake for 15-20 minutes, or until muffins are browned.
